Homemade Cranberry Sauce Recipe

Ingredients

  • 4 cups fresh or frozen cranberries
  • 1 cup granulated sugar for sugar-free substitute with sweetener of choice
  • ½ cup water
  • ½ cup orange juice
  • zest of one orange
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • pinch of salt to taste

For additional flavors based on preference, the following ingredients pair beautifully for the ultimate homemade cranberry sauce recipe:

  • Seasoning: cinnamon, nutmeg, or allspice
  • Texture: pecans, walnuts, or raisins

Instructions

  • Start by rinsing cranberries under cold water and discard any bruised or damaged ones, and drain when clean. Removing damaged cranberries helps ensure a clean and flavorful sauce
  • In a medium saucepan, add sugar, water and orange juice, and bring the mixture to a gentle boil over medium heat, stirring occasionally to help dissolve the sugar.
  • Once sugar has dissolved, combine the cranberries, orange zest, cinnamon, nutmeg, and a pinch of salt.
  • When mixture reaches a boil, reduce the heat to low and let the sauce simmer for 15-20 minutes or until it reaches your desired thickness. During this time. the cranberries will begin to burst, releasing their natural juices and flavors.
  • Stir occasionally to prevent sticking, and taste the sauce during the process to determine flavor. If you prefer it sweeter, add a bit more sugar to suit your taste.
  • Once the sauce is ready, remove it from the heat and let it cool. As it cools, the sauce will continue to thicken.
  • Once cooled, refrigerate until ready to serve.

Quinoa Stuffed Acorn Squash Recipe

Equipment

  • 1 Propane Oven

Ingredients

  • 2 Acorn squashes, halved and seeds removed
  • 1 cup Quinoa, rinsed
  • 2 cups Vegetable broth
  • 1 tbsp Olive oil
  • 1 Onion, finely chopped
  • 2 Cloves garlic, minced
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • ½ tsp Cinnamon
  • Salt and pepper to taste
  • ½ cup Dried cranberries
  • ½ cup Chopped walnuts
  • Fresh parsley for garnish

This recipe can be seamlessly customized based on your preferences. Options include:

  • Add/replace walnuts for almonds or pecans, sunflower or pumpkin seeds
  • Add any vegetables into the mixture, such as carrot, bell pepper, or mushroom
  • Add a crumbled goat cheese and honey drizzle topping for extra flavor

Instructions

  • Preheat your oven to 375°F (190°C).
  • Place the acorn squash halves on a baking sheet, cut side up. Brush the insides with olive oil and sprinkle with salt and pepper. Roast in the preheated oven for 30-40 minutes or until the squash is tender.
  • While the squash is roasting, prepare the quinoa. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
  • In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened.
  • Add the cooked quinoa to the skillet with the sautéed onion and garlic. Stir in the cumin, paprika, cinnamon, dried cranberries, and chopped walnuts. Season with salt and pepper to taste. Cook for an additional 5 minutes, allowing the flavors to meld.
  • Once the acorn squash is tender, fill each half with the quinoa mixture.
  • Garnish with fresh parsley for a burst of color and freshness.

Homemade Gravy Recipe

  • 1 Propane Stove
  • 1 Medium Saucepan

Ingredients

  • 2 tbsp Butter salted or unsalted
  • 2 tbsp All- Purpose Flour
  • 1 cup Broth choice of flavor from chicken, turkey, vegetable, or beef (homemade or store-bought)
  • 1/2 cup Heavy Cream option to substitute with milk for a lighter version
  • Salt & Pepper to taste
  • Additional Seasoning customize your gravy by adding herbs, spices, or any seasonings that suit your palate.

Instructions

  • Prepare Your Ingredients: Start by measuring out all your ingredients to have them ready. This will make the cooking process smoother and more enjoyable
  • Create the Roux: In a medium saucepan, melt the butter slowly over medium heat. Once melted, begin to add the flour by sprinkling it in, and stir constantly with a whisk till smooth. Continue to cook and stir for about 2-3 minutes or until the roux turns a light, golden brown color. This step is crucial for flavor development.
  • Add the Broth: Gradually pour in the cup of broth while continuing to whisk the roux. This will create a smooth and lump-free mixture.
    Allow the mixture to come to a gentle simmer, stirring occasionally. It will begin to thicken as it cooks. This should takeabout 5-7 minutes
  • Incorporate the Cream: Once the gravy has reached your desired consistency, add the heavy cream or milk and stir it in. Let the mixture simmer for an additional 2-3 minutes to thicken slightly more.
  • Season to Perfection: Taste your gravy and season it with salt and pepper to your liking, plus any other seasonings of choice.
    Pro tip: We like to remind our cooks to be cautious with the salt, as the broth may already contain some.
  • Serve and Enjoy: Your homemade gravy is now ready to be poured over your favorite dishes! Whether it's roasted meats, mashed potatoes and vegetables, or even biscuits, this gravy will take your meal to the next level.

Recipe for Sweet Potato Casserole with Marshmallows

  • 1 Propane Oven

Ingredients

  • 4 Sweet Potatoes medium sized
  • 1/2 cup Brown Sugar
  • 1/4 cup Melted Butter salted or unsalted
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1/3 cup Milk
  • 1/2 tsp Salt
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1 1/2 cups Marshmallows mini or standard size
  • 1/2 cup Crushed Pecans optional

Instructions

  • Cook the Sweet Potatoes: Preheat your propane powered oven to 350°F and bake them in the for about 45-50 minutes till soft. Pierce the sweet potatoes with a fork to check of softness. Let them cool for a few minutes. Option to peel or scoop the potato out. Add to a large mixing bowl and mash.
  • Mix Ingredients: To the mashed sweet potatoes, add the brown sugar, melted butter, eggs, vanilla extract, milk, salt, ground cinnamon, and ground nutmeg. Mix well until all the ingredients are combined.
    Option to mix crushed pecans into sweet potato mash.
  • Transfer to Baking Dish: Transfer the sweet potato mixture to a greased 9x9-inch baking dish or a similar-sized casserole dish. Smooth the top with a spatula.
  • Marshmallow Topping: Sprinkle the marshmallows evenly over the top of the sweet potato mixture.
    Option to add crushed pecans as topping with marshmallows.
  • Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the marshmallows are golden brown and the casserole is heated through.
  • Serve: Remove the sweet potato casserole from the oven and let it cool for a few minutes before serving. Enjoy your sweet and gooey sweet potato casserole with marshmallows!

  • 1 Propane Stove

Ingredients

  • 3 lbs Lean ground beef
  • 56 oz Crushed tomatoes
  • 28 oz Diced tomatoes
  • 6 oz Tomato paste
  • 1 large Green bell pepper
  • 1 large Red bell pepper
  • 8 oz Container of mushrooms sliced/chopped
  • 1 large Sweet onion
  • 2 tbsp Paprika
  • 4 tbsp Italian spice
  • 1 tsp Pepper
  • 1 tsp Salt
  • 1 tbsp Sugar

Instructions

  • Chop/dice peppers and onion and place into a sauté or comparable fry pan.
  • Add salt and pepper, bring to high heat, and sauté until caramelized.
  • Mix in ground beef and paprika. Stir occasionally until beef has browned.
  • Transfer contents into 6 – 8-quart sauce pan and stir in tomato paste.
  • Add cans diced tomato as a layer.
  • Add sugar across top as a layer.
  • Add crushed tomatoes as a layer.
  • Add Italian spice as a layer.
  • Add tomato paste as a layer.
  • Simmer on lowest possible heat 6-12 hours, stirring occasionally or once an hour. (Do not scrape the bottom.)
